Quick Ken's Pizza Pie 

This recipe is perfect when you want a good pizza, but you don't want to spend a lot of time. 

Heat 2 flour tortillas in the microwave long enough for them to become soft and flexible. Place one tortilla in a pie plate, allowing it to take the shape of the pan. Add sauce (see below) and cheese then cover with the other tortilla. Then add more sauce and cheese and any desired toppings. Bake in a preheated 450 degree oven until cheese is bubbling and turning a golden brown (approximately 15 minutes). When you remove it from the oven, it should slide easily from the pan and retain the shape of the pan on the plate. 

Sauce 

I prefer to season my own tomato sauce as opposed to purchasing something like "Pizza Quick" sauce. The seasonings that I prefer are: oregano, sweet basil, minced onion, garlic (fresh if possible) and of course, red pepper. I would give you an exact recipe, except I don't use one. I simply pour some sauce in a cup and season to taste. Experiment! Remember: variety is the spice of life! 

General Tips 

If you like pepperoni, but don't like all the grease, simply place a single layer of sliced pepperoni on paper towels and microwave for about 45 seconds before placing it on your pizza. 

Try making your own dough. Many people buy pizza mixes or pre-made crusts, and that's ok, but you will be surprised at how much better home-made dough tastes. 

Pre-bake the crust. After spreading the dough on the pizza pan (put flour on your hands), bake in a preheated oven until it just starts to turn brown.
